I'd make Dishing Up the Dirt's warm dates with olive oil, sea salt, and lemon zest. Then, sticky rice seasoned with cider vinegar formed into 3x1" pieces, topped with sliced salmon with maple-hot mustard glaze finished under a broiler & topped with a few Maldon flakes.
I would make ginger chicken and rice soup! It’s one of my go-to soups during soup season because it’s so flavorful and full of warming ingredients like onion, ginger, and chilis. The cashews would be a perfect topping for the soup to add a bit of nutty crunch.
I thought of Shakshuka right away when I saw her list: it makes use of the plum tomatoes, the onions, the chiles, the eggs, the cumin and the cilantro. I might treat myself to some salty feta for topping, and some crusty bread for sopping up the sauce 😇
Oh that reminds me, in Kung Food there's also a Smoky Tomato-Egg Stir-Fry which the authors explains as a cross between the Chinese stir-fry and shakshuka
I love baking too much not to add some gluten free flours to the list - other than that Sohla El-Waylly’s ingredients can come live at my house too! Great flavors!
The first dish came to my mind was Sohla's recipe of Maple Ginger Tofu Wraps. It's one my favorite things to make. Alongwith that Tomato Saar (a coconut based tomato soup) and Vegetable pulav will make a wonderful dinner.
a (all blended up) white bean, cashew, lemon, garlic, parm, chili flake pasta sauce w spaghetti, and a side of braised cabbage studded w olive oil sizzled dates & olives is a go to fave for me

on my way over. what a meal, jen!
It's a great list! I haven't quite worked out what's on mine yet.

Tomato Saar sounds divine
How about a Picadillo - plenty of regional variations to riff off of, you'd just have to replace the raisins with dates :)
