Because my husband does not like mushrooms, I depend on Trader Joe’s umami Mushroom &Co seasoning. My personal list would sub out spinach for kale and regular potatoes for sweet potatoes.
I always grab a shallot over an onion because it's typically the amount of allium I'm after in a dish. And from a recipe writing standpoint onions can tricky since they vary in size so much. (How big is a medium onion, really?) But the great news about cooking is you make the rules in your own kitchen!
This is hard! My guess as to the remaining 16 ingredients are: cumin, chickpeas, lentils, pasta, rice, shrimp, cabbage, onions, kimchi, feta, cauliflower, coriander, snap or snow peas, broccoli, peanuts, and smoked paprika.
I love this concept. My favourite conversation to have when camping w friends each summer is … you can open a small supply store in the bush. You can only stock 10 (!!!) ingredients. What are they ? I felt like what everyone chose to stick their imaginary stores with said a lot about them, and the kind of camping trip they were looking forward to

I don’t think I could have too many onions in most dishes. And if only shallots didn’t require persnickety peeling!

Onions are missing for sure. Pasta. Rice....but which variety? Maybe Arborio for risotto & basmati or long grain white.
Parm, feta & mozz for cheeses. Tinned tuna. Cumin (my fave). Smoked paprika (my second favourite). Canned chickpeas & brown lentils. Cabbage. Miso. Tahini.
Cumin is also my fave and definitely makes the list
