an accidental summer spread ... happy july 4 menu
No more looking at computers. Let’s go outside and heat the grill and eat good food. We’re going camping in Rhode Island, but I just realized that some recent recipes of mine would make an ideal summer dinner menu: a mix of fresh/crunchy/no-cook and charred/juicy/rich. Unlocked links for all!
Start with a dip
Dill Pickle Tzatziki
The punchiest parts of tzatziki and tartar sauce in one dip. I’d read that the Greek chef Diane Kochilas adds cornichons to her tzatziki and I wondered if pickled cucumbers could replace the fresh. They can!

I grilled over 40 so that every one of yours is snappy, juicy, crisp.
Dijonnaise chicken
You won’t really taste the mayo or Dijon on the chicken: They’re there so that chicken behaves on the grill like we want it to. No sticking, crisping outsides, juicy insides. How many times can I say juicy and crisp in this newsletter.
Make some salads (both easily made ahead)
Tomato salad
Tomatoes with only enough other stuff to make them taste their best, and for them to be considered a salad.
Green bean salad with pickles and feta
Oops more pickles. Well, you already have them out so why not amp up a green bean salad with more pickles and their brine plus red onion and feta and their brine? Best really cold so make it ahead.
This dill tzatziki dip is killer - thanks for sharing! We made that plus your All Time Chicken Thighs as sort of a chicken slider bar and it came out awesome. A huge hit with our July 4th crowd! Will have to try these dijonnaise thighs next. Thanks!
